Anne Salad

Anne taught me this salad strategy, so I call it the “Anne Salad.”

The strategy is: lot of ingredients, chopped small.
  • Base of baby greens, I like to use the mixed baby greens but baby spinach works well too.
  • Lots of small chopped veggies in a variety of colors: zucchini, yellow squash, red bell pepper, carrots, and celery.
  • A nut: sunflower seeds, pine nuts, slivered almonds.  Other nuts possible too.
  • A soft fat: crumbled goat cheese, avocado.  Or both!
  • Fruit is optional.  One or two of: fresh blueberries, dried cranberries, dried blueberries, fresh grapes (cut in half or quarters), strawberries (cut smallish).
  • Dressing of choice.  When I add fruit, I use a sweet dressing like Brianna’s Poppy Seed or Brianna’s Raspberry Vinaigrette.  With no fruit, I like Ranch.
  • As with any dressing I follow the adage:  “Less dressing, more tossing.”
