My Mom’s Oven Roasted Veggies

My mom’s version is much simpler and faster than Helen’s:

  • She buys the pre-cut assorted veggies (zuchinni, bell peppers), plus one or more of baby carrots, fennel, one red onion, okra, and sweet potato
  • preheats the oven to 400 (?),
  • cuts the few veggies that are too big, cuts the stem top off okra, cuts the fennel bulb and onion into 1/8ths, cuts the sweet pototoe into chunks
  • sprays a baking sheet with spray EVOO,
  • dumps the veggies on a baking sheet, squeezing in as many baby carrots as she can, since they are the best.  😉
  • sprays the veggies with the spray EVOO
  • bakes (oven roasts) for 25 minutes.
  • Done.
  • Makes enough for 3-4 adults.

It’s missing the browning of Helen’s version but it so quick and easy and has so many different veggies, it’s worth it!
