Pumpkin Soup Version #2

Dice in food processor:

  • 2 carrots
  • 2 stalks celery
  • ½ onion
  • 1 T garlic

Then sautéed in lots of butter (4T?) until nicelysoft for eating

add:

  • 4 c chicken broth
  • 4 c pumpkin puree (steamed)

bring to simmer, let go until reduces some

puree with immersion blender

  • ½ c heavy cream

simmer for 15 min or so

salt to taste
