Roasted Winter Squash Seeds

Roasted Butternut Squash Seeds

Like pumpkin seeds, you can roast the other winter squash seeds.  This example is butternut squash seeds.

I scooped out the seeds and pulp, put them in a bowl, generously covered with water and let it soak for 24+/- hours.

Separated the seeds from the pulp, spread them out on a cookie sheet, air dried (stirring occasionally).

Preheat oven to 275.

Put seeds in a small bowl. Drizzled olive oil & Celtic Sea Salt. Stirred to coat.

Spread on parchment paper lined cookie sheet.

Roasted in 275 degree oven, at least 15 minutes.

Yummy!
